Hulk Smashed Potatoes
Today, we are making Hulk Smashed Potatoes! Little boys love their comic book characters and their superheros! Cooper loves playing 'hulk smash!' and we just hope his little brother isn't in the way.
These delectable potatoes would be great served over a baby kale salad with seared steak and whatever fresh veggies you have in the fridge.
HULK SMASHED POTATOES:
- 1.5 lbs redskin potatoes, size B or smaller
Green Power Sauce:
- 1/2 cup fresh flat leaf parsley
- 1/2 cup fresh cilantro
- 1/4 teaspoon dried oregano
- 1/2 teaspoon fresh garlic, minced
- 1/4 teaspoon sea salt
- pinch black pepper
- 1/4 cup good quality olive oil
- 1-2 tablespoons red wine vinegar
Bring a large stockpot of water to a boil, add redskin potatoes whole and boil until soft.
While potatoes cook, prep your Green Power Sauce! Add all ingredients to a food processor, or simply chop fine by hand the herbs and garlic. Then mix in olive oil, red wine vinegar, salt and pepper. Mix well, taste and season as necessary. If you have older kids, make sure to get them involved in the making of the sauce!
Remove potatoes from the water, and let the kiddos have some fun! Place 1 potato at a time on a firm, flat surface like a cutting board. Using a mug or can with a flat bottom, have the kids smash the potato once or twice, enough so it busts open and is shaped like a small hockey puck! Pile the potatoes up, and drizzle each layer with plenty of Green Power Sauce. Oh ya!
SUGGESTIONS:
Serve with grilled strip steaks and a on bed of baby kale, red peppers, and pepitas.
